Instructions

  1. Cook the bacon: Lay bacon slices in a cold skillet and cook over medium heat for 8-10 minutes, flipping occasionally, until crispy. Drain on paper towels and crumble.
  2. Prep the veggies: Finely shred romaine lettuce, quarter grape tomatoes or dice a large tomato, and thinly slice green onions. Pat tomatoes dry with paper towels.
  3. Make the creamy base: In a medium mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Beat with a hand mixer or sturdy spoon until smooth and fluffy. Season with salt and black pepper to taste.
  4. Fold in the good stuff: Stir in shredded cheddar cheese, half the crumbled bacon, and green onions if using.
  5. Assemble the dip: Spread the creamy base evenly into a serving dish. Top with shredded lettuce, then scatter tomatoes on top. Sprinkle with remaining bacon and extra cheese if desired. Add optional garnishes.
  6. Chill (optional): Chill for 30 minutes to meld flavors. If chilling, wait to add lettuce and tomatoes until just before serving.
