Caramelized Onion & Brie Toast

This easy sourdough appetizer features deeply caramelized onions and creamy brie cheese melted over crisp sourdough bread. It’s a crowd-pleasing, sophisticated snack or starter that’s ready in under 30 minutes and perfect for any occasion.

  • 4 thick slices sourdough bread (about 1/2-inch each)
  • 6 oz brie cheese, sliced
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1 tsp fresh thyme (optional)
  • Black pepper, to taste
  • Honey, for drizzling (optional)

Instructions

  1. Heat olive oil and butter in a large skillet over medium-low heat.
  2. Add sliced onions and salt. Stir to coat and cook, stirring every few minutes, until onions are soft, golden, and jammy (about 20–25 minutes). If onions start to stick, add a splash of water. Optional: Stir in fresh thyme during the last 2 minutes of cooking.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. Brush sourdough slices lightly with olive oil on both sides and arrange on the baking sheet.
  5. Toast bread in the oven for 5 minutes, or until lightly crisp.
  6. Remove bread from oven. Top each slice with a generous layer of caramelized onions and sliced brie. Sprinkle with black pepper and extra thyme if desired.
  7. Return to oven and bake for 7–8 minutes, or until brie is melty and bubbling.
  8. Transfer toasts to a board or platter. Drizzle with honey if desired. Slice and serve warm.

Notes

For best results, caramelize onions slowly over medium-low heat. Use sturdy bread to hold toppings. Brie melts best at room temperature. Prep onions ahead for faster assembly. Add honey or fresh thyme for extra flavor. For gluten-free, use GF bread; for dairy-free, use vegan brie and butter.
