  • 1 1/2 cups warm water (110°F)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 2 tablespoons granulated sugar (25g)
  • 1 teaspoon salt (6g)
  • 2 tablespoons unsalted butter, melted (28g)
  • 1/3 cup baking soda (45g)
  • 4 cups water (950ml)
  • 1/2 cup granulated sugar (100g)
  • 1 1/2 tablespoons ground cinnamon (12g)
  • 4 tablespoons unsalted butter, melted (56g)
  • 4 ounces cream cheese, softened (113g)
  • 1/2 cup powdered sugar (60g)
  • 1 teaspoon vanilla extract (5ml)
  • 23 tablespoons milk (30-45ml), as needed
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine warm water, granulated sugar, and yeast. Stir and let sit for 5 minutes until foamy.
  2. Add melted butter and salt. Stir to combine.
  3. Gradually mix in flour. Knead by hand or with a dough hook for 5-7 minutes until smooth and slightly tacky. Add more flour if needed.
  4. Form dough into a ball, cover, and let rise in a warm spot for 30 minutes.
  5. Punch down dough and turn onto a lightly floured surface. Divide into 4 pieces. Roll each into an 18-inch rope, about 1-inch thick.
  6. Cut each rope into 1.5-inch pieces (about 40-48 bites total).
  7. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  8. In a medium saucepan, bring 4 cups water and baking soda to a simmer, stirring to dissolve.
  9. Working in batches, drop pretzel bites into the water for 20-30 seconds. Remove with a slotted spoon and place on the baking sheet.
  10. Bake for 10-12 minutes, until golden brown and slightly firm. Let cool for about 5 minutes.
  11. Combine granulated sugar and cinnamon in a small bowl.
  12. Brush each warm pretzel bite with melted butter, then roll in the cinnamon sugar mixture.
  13. In a medium bowl, beat cream cheese, powdered sugar, vanilla, and a pinch of salt until smooth. Add milk a little at a time until creamy and dippable.
  14. Serve pretzel bites warm with cream cheese dip.

Notes

For gluten-free, use a gluten-free flour blend. For dairy-free, substitute vegan butter and dairy-free cream cheese. Don’t skip the baking soda bath for authentic pretzel flavor. Coat bites in cinnamon sugar while warm for best results. Store leftovers in an airtight container for up to 2 days at room temperature or freeze for up to 2 months.
