Instructions

  1. Drain the pineapple: Place the crushed pineapple in a strainer and press out as much liquid as possible.
  2. Mix the base: In a large mixing bowl, combine the drained pineapple, shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Stir until evenly combined.
  3. Chill the mixture: Cover the bowl with plastic wrap and refrigerate for 30 minutes to make the mixture easier to handle.
  4. Shape the bites: Use a small cookie scoop or spoon to portion out the mixture. Roll each portion between your palms to form bite-sized balls.
  5. Add toppings (optional): Roll the bites in additional shredded coconut, drizzle with melted chocolate, or sprinkle with chopped nuts.
  6. Set the bites: Place the finished bites on a tray lined with wax or parchment paper. Refrigerate for at least an hour to firm up.
