A hearty, one-pan skillet dinner featuring earthy mushrooms, crispy bacon, and a rich garlic butter sauce. This easy cowboy mushroom skillet is perfect for busy weeknights, brunch, or cozy gatherings, and is naturally low-carb and gluten-free.

  • 6 oz thick-cut bacon, diced
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 16 oz mushrooms (cremini, baby bella, or button), sliced
  • 1 small onion, finely chopped
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 1/2 tsp salt, to taste
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp chopped parsley
  • 1 tbsp lemon juice (optional)

Instructions

  1. Dice bacon into bite-sized pieces. Heat a large skillet over medium heat. Add bacon and cook for 5-7 minutes, stirring occasionally, until crispy and golden brown. Transfer bacon to a paper towel-lined plate to drain, leaving about 1 tbsp bacon fat in the pan.
  2. While bacon cooks, mash together butter and minced garlic in a small bowl.
  3. Add sliced mushrooms and chopped onion to the skillet with reserved bacon fat. Cook over medium-high heat for 8-10 minutes, stirring occasionally, until mushrooms release their juices and start to brown. Add 1 more tbsp butter if mushrooms look dry.
  4. Stir in garlic butter mixture and thyme. Cook for another 2-3 minutes until garlic is fragrant and mushrooms are glossy.
  5. Sprinkle in salt and black pepper (adjust to taste). Add a pinch of red pepper flakes if desired.
  6. Fold crispy bacon pieces back into the skillet, stirring gently. Cook for 1-2 minutes to warm through.
  7. Remove skillet from heat. Squeeze in lemon juice if using. Sprinkle chopped parsley over the top.
  8. Serve hot, spooning onto plates or straight from the skillet.

Notes

Don’t overcrowd the pan for best mushroom browning. Cook bacon separately for maximum crispiness. Use fresh herbs for extra flavor. For vegetarian or dairy-free, substitute plant-based bacon and butter. Store leftovers in an airtight container for up to 3 days; bacon stays crispiest if stored separately.
