Cowboy Mushrooms are a quick and easy side dish featuring sautéed mushrooms seasoned with garlic, fresh herbs, and butter. Perfect for pairing with steak, chicken, or as a topping for baked potatoes.

  • 16 oz cremini or baby bella mushrooms
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves fresh garlic, minced
  • 1 tsp fresh thyme, finely chopped
  • 1 tbsp fresh parsley, chopped
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Optional: A pinch of red pepper flakes

Instructions

  1. Clean the mushrooms: Wipe the mushrooms clean with a damp paper towel. Avoid rinsing them under water, as they can absorb moisture and become soggy.
  2. Slice the mushrooms: Cut larger mushrooms into halves or quarters for more even cooking.
  3. Heat the skillet: Warm 2 tablespoons of olive oil in a large skillet over medium heat.
  4. Add the mushrooms: Place the mushrooms in the skillet in a single layer. Let them cook undisturbed for 3-4 minutes to develop a golden crust.
  5. Stir and season: Flip the mushrooms and add the butter, minced garlic, thyme, salt, and pepper. Stir to coat everything evenly. Cook for another 5 minutes, stirring occasionally, until the mushrooms are tender.
  6. Add parsley: Just before removing from heat, sprinkle in the chopped parsley. Stir to combine.
  7. Serve immediately: Transfer the mushrooms to a serving dish and enjoy while warm.

Notes

For best results, avoid overcrowding the skillet to ensure the mushrooms caramelize properly. You can add a splash of white wine or balsamic vinegar to deglaze the pan for extra flavor.
