  • 2 boneless, skinless chicken breasts, sliced into thin cutlets
  • 12 ounces fettuccine pasta
  • 3 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sautΓ© for 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  4. Gradually whisk in the grated Parmesan cheese until the sauce thickens and becomes smooth. Season with additional salt and pepper to taste.
  5. Add the cooked pasta to the skillet, tossing to coat evenly in the sauce. If needed, use reserved pasta water to loosen the sauce until it reaches your desired consistency.
  6. Cut the chicken into thin slices and place it on top of the pasta. Toss gently to combine.
  7. Sprinkle with fresh parsley for garnish and serve immediately while warm.

Notes

For a lighter version, substitute heavy cream with half-and-half. Save pasta water to adjust the sauce consistency. Use freshly grated Parmesan for the best results.
