A crispy, cheesy, and healthy side dish made with zucchini, Parmesan, and breadcrumbs, cooked to perfection in an air fryer. Perfect for busy weeknights or as a crowd-pleasing appetizer.

  • 2 medium-sized zucchinis, sliced into 1/4-inch thick rounds
  • 1 large egg, lightly beaten
  • 1/2 cup panko breadcrumbs
  • 1/4 cup Parmesan cheese, finely grated
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Wash the zucchinis and slice them into 1/4-inch thick rounds. Pat them dry with a paper towel to remove excess moisture.
  2. In one bowl, whisk the egg. In another bowl, mix the breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  3. Dip each zucchini slice into the egg, allowing any excess to drip off, then press it into the breadcrumb mixture, ensuring it’s evenly coated on both sides.
  4. Set your air fryer to 375°F (190°C) and preheat for 3 minutes.
  5. Place the coated zucchini slices in a single layer in the air fryer basket. Don’t overcrowd—cook in batches if necessary.
  6. Spray the zucchini lightly with cooking spray and air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the air fryer and serve immediately. Enjoy with marinara sauce for dipping if desired.

Notes

Don’t skip the cooking spray as it helps the breading crisp up beautifully. Work in batches to avoid overcrowding the air fryer, and slice the zucchini evenly for consistent cooking.
