  • 23 jalapenos, finely diced
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 teaspoon baking powder
  • 1 large egg, beaten
  • ½ cup milk
  • Salt and pepper to taste
  • Vegetable or canola oil for frying
  • Optional: garlic powder, smoked paprika, or cumin
  • Optional: chopped cilantro

Instructions

  1. In a mixing bowl, combine the flour, cornmeal, baking powder, salt, and any optional spices.
  2. In another bowl, whisk together the egg and milk, then pour this into the dry ingredients. Mix until just combined.
  3. Fold in the corn, diced jalapenos, and shredded cheddar cheese. Stir until everything is evenly incorporated.
  4. Use a spoon or your hands to scoop out small portions of the mixture. Roll them into bite-sized balls or flatten slightly for a more nugget-like shape.
  5. In a deep fryer or heavy-bottomed pot, heat the oil to 350°F (175°C). To test, drop a small piece of batter into the oil—it should sizzle and float to the top.
  6. Carefully drop the nuggets into the hot oil, a few at a time. Fry for 3-4 minutes, turning occasionally, until golden brown and crispy.
  7. Remove the nuggets with a slotted spoon and place them on a paper towel-lined plate. Serve immediately with your favorite dipping sauces.

Notes

For perfectly shaped nuggets, freeze them for 10-15 minutes before frying. Monitor the oil temperature to ensure it stays around 350°F (175°C).
