These crispy jalapeno popper egg rolls are the perfect snack or appetizer, combining a creamy, cheesy, and spicy filling with a crunchy egg roll wrapper, all cooked to perfection in the air fryer.

  • Fresh jalapenos, diced (seeds removed for less heat)
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 tsp garlic powder
  • 2 green onions, thinly sliced
  • 1 egg, beaten (for egg wash)
  • Cooking spray

Instructions

  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar, crumbled bacon, garlic powder, and green onions. Mix until well combined.
  2. Slice the jalapenos in half, remove the seeds and membranes for less heat, and dice them finely. Stir them into the cheese mixture.
  3. Lay an egg roll wrapper on a clean surface. Place about 2 tablespoons of filling in the center. Fold the bottom corner up over the filling, then fold in the sides. Roll tightly, sealing the edge with a little egg wash.
  4. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  5. Spray the air fryer basket with cooking spray. Place the egg rolls in a single layer, seam side down, and spray the tops lightly with cooking spray. Cook for 8-10 minutes, flipping halfway through, until golden and crispy.
  6. Let the egg rolls cool for 2-3 minutes before serving.

Notes

For a vegetarian option, omit the bacon and add diced bell peppers or corn. To make them spicier, leave the seeds in the jalapenos or add cayenne pepper. Serve immediately for the best crunch.
