Crispy Parmesan Zucchini Fries

A healthier twist on classic fries, these crispy zucchini sticks are coated in Parmesan and breadcrumbs, then baked to perfection. Perfect as a snack, side dish, or party appetizer.

  • 2 medium-sized zucchinis, cut into fry-like sticks
  • 1 large egg, beaten
  • 1 cup plain or panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash the zucchinis and trim the ends. Slice them into sticks about 3-4 inches long and 1/2 inch thick.
  3. In one shallow bowl, beat the egg. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip each zucchini stick into the egg wash, then roll it in the breadcrumb mixture, pressing gently to coat evenly.
  5. Place the coated zucchini sticks in a single layer on the prepared baking sheet. Lightly spray with olive oil.
  6. Bake for 20-25 minutes, flipping once halfway through, until golden brown and crispy.
  7. Remove from the oven and let cool for a couple of minutes. Serve warm with your favorite dipping sauce.

Notes

For extra crispiness, use a wire rack to bake the fries. Pat the zucchini dry before coating to prevent sogginess. Serve immediately for the best texture.
