Ingredients

Scale
  • 1 cup (240ml) water
  • 1/2 cup (113g) unsalted butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup (125g) all-purpose flour
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • Vegetable oil (for frying)

Instructions

  1. In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Heat over medium until the butter melts and the mixture begins to boil.
  2. Reduce the heat to low and add all-purpose flour. Stir vigorously with a wooden spoon until the dough comes together in a ball.
  3. Remove the saucepan from heat and let the dough cool for about 5 minutes.
  4. Mix in eggs, one at a time, stirring until fully incorporated after each addition. Add vanilla extract and mix until smooth.
  5. Transfer the dough to a piping bag fitted with a star tip.
  6. Heat about 2 inches of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  7. Pipe 2-3 inch strips of dough directly into the hot oil, using scissors to cut the dough as you go. Fry in small batches, turning occasionally, until golden brown (about 2-3 minutes per batch).
  8. Remove the churros with a slotted spoon and drain on paper towels.
  9. In a mixing bowl, combine granulated sugar and ground cinnamon. Roll the warm churros in the cinnamon-sugar mixture until fully coated.
  10. Serve warm with your favorite dipping sauce.

Notes

Ensure the oil temperature stays at 350°F (175°C) for best results. Serve churros immediately for maximum crispiness. For variations, try adding cocoa powder to the dough or using holiday spices in the coating.
