  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 2 Β½ cups (315g) all-purpose flour
  • Β½ tsp baking powder
  • ΒΌ tsp salt
  • 8 oz (226g) cream cheese, softened
  • Β½ cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries, sliced
  • Blueberries
  • Kiwi, peeled and sliced
  • Mango, diced
  • Raspberries or blackberries

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy (about 2 minutes). Add the egg and vanilla extract, mixing until combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Wrap the dough in plastic wrap and chill for 30 minutes.
  3. Preheat your oven to 350Β°F (175Β°C). Roll out the dough on a floured surface to about ΒΌ-inch thickness. Use a round cookie cutter to cut out shapes and place them on a parchment-lined baking sheet.
  4. Bake the cookies for 8-10 minutes, or until the edges are just starting to turn golden. Allow them to cool completely on a wire rack.
  5. In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. Spread a generous layer of frosting on each cooled cookie. Top with an assortment of fresh fruit, arranging them however you like.

Notes

Chill the dough to prevent spreading. Pat the fruit dry before decorating to avoid watery frosting. Store leftovers in an airtight container in the refrigerator for up to 3 days.
