Golden, crispy bites filled with a creamy mixture of spinach, ricotta, and Parmesan. Perfect for parties, potlucks, or as a quick snack.

  • 3 cups fresh spinach, roughly chopped (or frozen spinach, thawed and squeezed dry)
  • 1 cup ricotta cheese
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 package puff pastry sheets, thawed
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat a tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and garlic, cooking until wilted (about 3-4 minutes). Remove from heat and let it cool slightly.
  3. In a mixing bowl, combine the ricotta, Parmesan, egg, sautéed spinach, salt, and pepper. Stir until well blended.
  4. Roll out the thawed puff pastry on a lightly floured surface. Cut into 3-inch squares using a sharp knife or pizza cutter.
  5. Place a small spoonful of the spinach-ricotta mixture in the center of each square. Fold the corners together to form a pouch, pinching the edges to seal.
  6. Lightly brush the tops with olive oil or an egg wash for a golden finish.
  7. Arrange the bites on the prepared baking sheet and bake for 15-20 minutes, or until puffed and golden brown.
  8. Let them cool for a few minutes before serving warm.

Notes

Don’t overfill the pastry squares to prevent the filling from leaking out. If freezing, bake straight from frozen without thawing.
