  • Creamy, ripe Brie cheese
  • 2 medium yellow or sweet onions
  • 2 tablespoons unsalted butter
  • Olive oil for drizzling
  • Fresh thyme (optional)
  • Pinch of salt
  • Pinch of sugar
  • Balsamic glaze (optional)

Instructions

  1. Slice 2 medium onions thinly. Heat 2 tablespoons of butter in a skillet over medium heat. Add the onions and cook, stirring occasionally, for about 25 minutes until golden brown and soft. Sprinkle in a pinch of sugar and salt halfway through to enhance the flavor.
  2. While the onions are caramelizing, slice your sourdough bread into thick pieces (about 1 inch thick). Drizzle lightly with olive oil.
  3. Preheat your oven to 375Β°F (190Β°C). Place the bread slices on a baking sheet and toast for 5-7 minutes until slightly crisp.
  4. Spread a generous layer of Brie onto each piece of toast. Top with a spoonful of caramelized onions. Add a sprinkle of fresh thyme if desired.
  5. Switch your oven to broil. Place the assembled toast back in the oven and broil for 2-3 minutes until the Brie is melted and bubbly.
