Ingredients

Scale
  • 12 large eggs, hard-boiled and peeled
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white vinegar
  • Salt and pepper, to taste
  • Smoked paprika (for garnish)
  • Chopped crispy bacon
  • Diced avocado or guacamole
  • Shredded cheddar cheese
  • Sliced green onions
  • Chopped chives or parsley
  • Crispy fried onions
  • Capers
  • Smoked salmon
  • Pickled jalapeños
  • Hot sauce (like Sriracha or Tabasco)
  • Diced tomatoes
  • Everything bagel seasoning
  • Relish or chopped pickles

Instructions

  1. Place the eggs in a single layer in a large pot and cover with water. Bring to a boil, then turn off the heat and let the eggs sit for 10 minutes. Transfer to an ice bath to cool.
  2. Gently tap each egg on a hard surface to crack the shell, then peel under running water for easier removal.
  3. Slice the eggs in half lengthwise and scoop out the yolks into a bowl. Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth.
  4. Pipe or spoon the yolk mixture back into the egg whites. Arrange them on a platter.
  5. Place each topping in a small bowl with a spoon or tongs. Arrange the bowls around the platter of eggs for easy access.
  6. Sprinkle a little smoked paprika over the eggs for a pop of color, and serve immediately or refrigerate until your event.

Notes

Prep the eggs and toppings the night before to save time on the day of your party. Use older eggs for boiling—they’re easier to peel than fresh ones.
