  • 2 cups fresh watermelon, cut into 1-inch cubes (about 24 cubes, seedless preferred)
  • 8 ounces block feta cheese, cut into 1-inch cubes
  • 2 tablespoons honey (wildflower or clover recommended)
  • 1/2 teaspoon lemon zest, finely grated (optional but recommended)
  • 24 small fresh mint leaves
  • Freshly ground black pepper, to taste
  • Toothpicks or small skewers (for serving)

Instructions

  1. Slice the watermelon into 1-inch thick slabs, then cut into 1-inch cubes. Pat dry with a paper towel if very juicy.
  2. Cut the block of feta into 1-inch cubes, slightly smaller than the watermelon cubes for easy stacking. Chill feta for 10 minutes if too crumbly.
  3. In a small bowl, mix honey and lemon zest until evenly combined.
  4. Place a watermelon cube on a platter, top with a feta cube, and tuck a mint leaf between or on top. Secure each stack with a toothpick or skewer.
  5. Drizzle the honey-lemon mixture lightly over each assembled bite.
  6. Crack fresh black pepper over the top for a subtle kick.
  7. Chill the platter in the fridge for 10-15 minutes before serving for extra refreshment. Serve cold.

Notes

Use the coldest watermelon for best texture. Assemble just before serving and drizzle honey at the last minute to avoid sogginess. For vegan, use plant-based feta and agave or maple syrup. Try basil or arugula instead of mint for a twist. Store leftovers in an airtight container for up to 24 hours, keeping honey separate until serving.
