  • 2 tablespoons honey (raw or wildflower honey preferred)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 teaspoon fresh thyme or rosemary, chopped (optional)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Peel and slice about 1 pound (450 grams) of carrots into uniform 1/2-inch thick pieces.
  2. In a mixing bowl, combine 2 tablespoons honey, 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon garlic powder (if using). Stir well until combined and shiny.
  3. Add the sliced carrots to the bowl and toss thoroughly with the honey glaze, making sure each piece is coated evenly.
  4. Preheat the air fryer to 380°F (193°C) and let it heat for 3 minutes.
  5. Place the glazed carrots in the air fryer basket in a single layer. Cook for 12 to 15 minutes, shaking or flipping halfway through to ensure even cooking. Look for golden edges and tender centers.
  6. Once cooked, transfer carrots to a serving dish. Sprinkle with 1 teaspoon chopped fresh thyme or rosemary, and squeeze about 1 teaspoon of fresh lemon juice over the top.
  7. Serve warm immediately. If holding, keep covered and warm in the oven at low heat.

Notes

If carrots seem dry after cooking, drizzle a little more honey and toss gently to restore glaze. Avoid overcrowding the air fryer basket for best crispiness. Flip or shake basket halfway through cooking. Fresh lemon juice brightens the glaze and balances sweetness. For vegan option, substitute honey with maple syrup or agave nectar.
