  • 1 loaf artisan bread (about 12 slices, sourdough or whole grain preferred)
  • 1/4 cup extra virgin olive oil
  • Juice of 1 large lemon
  • Sea salt to taste

  • 1 pint cherry tomatoes, halved
  • 45 radishes, thinly sliced
  • 1 cup microgreens or fresh herbs (basil, cilantro, or arugula)
  • 1/4 cup mixed nuts and seeds (toasted pumpkin seeds, sunflower seeds, or chopped walnuts)
  • 1/2 cup crumbled feta or goat cheese (optional)
  • Extras for variety: pickled onions, sliced cucumbers, everything bagel seasoning, fried egg (optional)

Instructions

  1. Prepare Your Avocados (5 minutes): Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Add the juice of one lemon and a pinch of sea salt. Mash with a fork until creamy but still a bit chunky.
  2. Toast the Bread (8–10 minutes): Slice your bread and toast it until golden and crisp. If using an oven, arrange slices on a baking sheet and broil for 2–3 minutes per side, watching closely to avoid burning.
  3. Arrange the Toppings (10 minutes): Halve cherry tomatoes, thinly slice radishes and cucumbers, crumble cheese, toast nuts and seeds lightly in a dry skillet, and wash microgreens or herbs. Set each topping in its own small dish.
  4. Set Up Your Toast Bar: Place the mashed avocado in a medium bowl with a spreader. Arrange toasted bread on a large platter or cutting board. Surround with bowls of toppings, lemon wedges, olive oil, red pepper flakes, and sea salt. Provide butter knives or spoons for each topping.
  5. Serve and Enjoy: Invite everyone to build their own avocado toast masterpiece.

Toast bread just before serving to keep it crisp. Keep mashed avocado covered tightly with plastic wrap pressed on the surface to prevent browning if prepping ahead.
