  • 8 ounces (225g) full-fat cream cheese, softened
  • 1 cup (100g) shredded sharp cheddar cheese
  • 12 slices thick-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Slice each jalapeño in half lengthwise and scoop out the seeds and membranes for less heat, or leave them in for more kick.
  2. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper until smooth.
  3. Spoon the cheese mixture into each jalapeño half, filling level with the edges but not overstuffed.
  4. Cut bacon slices in half crosswise. Wrap each stuffed jalapeño half with a bacon piece, spiraling to cover as much as possible. Secure with toothpicks if needed, but do not stretch bacon too tight.
  5. Preheat oven to 400°F (200°C). Arrange poppers on a foil-lined rimmed baking sheet spaced apart.
  6. Bake for 20-25 minutes, turning halfway through for even crispiness, until bacon is golden and cheese filling is bubbling.

Notes

Use thick-cut bacon to prevent breakage and ensure crispiness. Do not stretch bacon too tight when wrapping to avoid shrinking and pulling away during baking. Remove seeds for milder poppers.
