Instructions

  1. In a large pot, combine 12 ounces (355 ml) lager or pale ale, 1 cup (240 ml) water, sliced onion rings, smashed garlic cloves, 2 tablespoons unsalted butter, 1 teaspoon black peppercorns, 1 teaspoon mustard seeds, 2 bay leaves, and a pinch of red pepper flakes if desired. Bring to a gentle simmer over medium heat (about 5-7 minutes).
  2. Carefully place 6-8 fresh bratwursts into the simmering beer broth. Maintain a low simmer—avoid boiling vigorously to prevent casing from splitting. Partially cover the pot and poach the brats gently for 15-20 minutes.
