  • 8 oz cream cheese, softened
  • 3/4 cup beer (lager, amber ale, or pilsner), room temperature
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste
  • Soft pretzels (store-bought or homemade, warm) for dipping

Instructions

  1. Shred 2 cups of sharp cheddar cheese and soften 8 ounces of cream cheese by leaving it out at room temperature for 30 minutes.
  2. Pour 3/4 cup of your chosen beer into a medium saucepan over low heat and warm gently for 2-3 minutes without boiling.
  3. Add the softened cream cheese to the warm beer and whisk continuously until melted and smooth, about 3-5 minutes.
  4. Gradually add shredded cheddar cheese in small handfuls, whisking constantly until melted and smooth, about 5-7 minutes. Add a splash of beer or milk if too thick.
  5. Stir in garlic powder, onion powder, Dijon mustard, Worcestershire sauce, smoked paprika (if using), and salt and pepper to taste. Whisk until fully combined and creamy.
  6. Adjust consistency by adding beer or milk one tablespoon at a time if the dip is too thick; it should be thick but pourable.
  7. Pour the dip into a serving bowl and keep warm with a tea light candle warmer or in a low oven (around 200°F) while preparing pretzels.
  8. Warm store-bought pretzels according to package directions or bake homemade pretzels at 425°F for 12-15 minutes until golden and soft.
  9. Serve warm with soft pretzels cut into bite-sized pieces or whole for dunking.

Notes

Do not boil the beer to preserve flavor. Add cheese gradually and stir constantly to avoid clumps. Use room temperature cream cheese and beer for smooth blending. Reheat gently with a splash of beer or milk if dip thickens after refrigeration.
