Blackened Salmon Tacos with Mango Salsa

A quick and flavorful weeknight dinner featuring smoky blackened salmon paired with a bright, fresh mango salsa. Ready in just 15 minutes, this recipe is perfect for busy evenings.

  • 1 lb (450g) salmon fillets, skin removed
  • 2 tablespoons blackening seasoning (smoked paprika, cayenne, garlic powder, onion powder, dried thyme, oregano, salt, black pepper)
  • 2 tablespoons olive oil (or avocado oil)
  • 810 small corn or flour tortillas
  • 1 large mango, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 small jalapeño, finely minced (optional)
  • Salt and pepper, to taste

Instructions

  1. Prep your mango salsa: Dice mango, red bell pepper, and red onion into small pieces. Toss in a mixing bowl with cilantro, jalapeño (if using), and fresh lime juice. Season with salt and pepper and stir gently. Set aside.
  2. Pat salmon fillets dry with a paper towel. Brush all sides lightly with olive oil, then generously coat with blackening seasoning, pressing it in evenly.
  3. Heat a cast iron skillet over medium-high heat for about 3 minutes until very hot. Add 1 tablespoon olive oil and swirl to coat.
  4. Place salmon fillets in the skillet away from you. Cook without moving for 2-3 minutes until edges are crisp and bottom is darkened but not burnt. Flip carefully and cook the other side for 2-3 minutes until salmon flakes easily but remains moist.
  5. Warm tortillas separately in a dry skillet or wrapped in foil in the oven for 1-2 minutes until soft and pliable.
  6. Flake salmon into large chunks and spoon onto warm tortillas. Top generously with mango salsa and a squeeze of fresh lime if desired. Serve immediately.
