A hearty and easy breakfast casserole featuring savory sausage, fluffy eggs, melty cheddar cheese, and crispy hash browns. Perfect for family brunches or busy mornings.

  • 1 pound ground sausage (mild or sweet Italian preferred)
  • 8 large eggs, room temperature
  • 1 cup whole milk (240 ml)
  • 2 cups shredded cheddar cheese (200 grams)
  • 3 cups frozen hash browns, thawed (about 450 grams)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon dried parsley (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a large skillet over medium heat and brown the ground sausage for 7-8 minutes until no longer pink. Drain excess fat, leaving a little for flavor.
  3. Add the chopped onion and minced garlic to the skillet with the sausage. Cook for 3-4 minutes until onions are soft and translucent.
  4. In a large mixing bowl, whisk together the eggs and milk until fully blended. Add salt, black pepper, and dried parsley (if using).
  5. Add the thawed hash browns and shredded cheddar cheese to the egg mixture. Stir gently to combine.
  6. Lightly grease a 9×13 inch (23×33 cm) oven-safe baking dish with butter or non-stick spray.
  7. Spread the sausage and onion mixture evenly across the bottom of the baking dish.
  8. Pour the egg, cheese, and hash brown mixture over the sausage layer and spread evenly.
  9. Bake in the preheated oven for 45-50 minutes until the casserole is set in the middle and golden brown on top. A toothpick inserted should come out mostly clean.
  10. Let the casserole rest for 5-10 minutes before cutting and serving.

Notes

If the top browns too quickly, tent loosely with foil halfway through baking. Always thaw hash browns before use to avoid excess moisture. Let the casserole rest before slicing for cleaner cuts. You can assemble the casserole the night before and refrigerate for baking in the morning.
