  • 12 slices bacon (about 8 ounces/225 g), thin to medium thickness
  • ½ cup brown sugar (100 g), packed
  • 2 tablespoons honey (optional)
  • ½ teaspoon ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • Toothpicks for securing bacon

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper and place a wire rack on top if available.
  2. In a mixing bowl, combine brown sugar, honey (if using), black pepper, and garlic powder. Mix well until evenly coated.
  3. Cut each bacon slice in half crosswise. Wrap each little smokie with one piece of bacon and secure with a toothpick if needed.
  4. Roll each bacon-wrapped smokie in the brown sugar mixture, pressing gently so the sugar sticks. Place them on the wire rack or directly on the baking sheet, spaced about 1 inch apart.
  5. Bake for 25-30 minutes, flipping each smokie halfway through (about 12-15 minutes) using tongs to ensure even caramelization. Watch closely in the last 5 minutes to prevent burning.
  6. Optional: Broil for the last 1-2 minutes if bacon isn’t crisping enough, watching carefully to avoid burning.
  7. Let the smokies rest on the rack for 5 minutes before serving to allow the glaze to set.
