A rich, cheesy green bean casserole with bold cheddar flavor and a buttery biscuit topping, perfect for holidays or weeknight dinners.

Ingredients

Scale
  • 1 lb fresh green beans, trimmed and blanched
  • 2 tablespoons unsalted butter
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • 1 cup chicken or vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons parsley, finely chopped
  • 1 cup biscuit mix
  • ½ cup shredded Parmesan cheese
  • 2 tablespoons melted butter
  • ¼ cup heavy cream

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
  2. Blanch the green beans in a large pot of salted boiling water for 3-4 minutes until tender-crisp. Drain and set aside.
  3. Heat 2 tablespoons of butter in a skillet over medium heat. Add diced onion and minced garlic, cooking until softened and fragrant, about 5 minutes.
  4. Sprinkle 3 tablespoons of all-purpose flour over the onion mixture, stirring constantly. Gradually pour in 1 ½ cups of milk and 1 cup of chicken broth, whisking to avoid lumps. Cook until the sauce thickens, about 5-7 minutes.
  5. Stir in 1 cup of shredded cheddar cheese, ½ teaspoon of paprika, and salt and pepper to taste. Mix until the cheese is fully melted and the sauce is smooth.
  6. In a mixing bowl, combine 1 cup of biscuit mix, ½ cup of shredded Parmesan cheese, 2 tablespoons of melted butter, and ¼ cup of heavy cream. Stir until crumbly.
  7. Place the blanched green beans in the casserole dish. Pour the creamy cheese sauce over the top, ensuring it evenly coats the beans. Sprinkle the biscuit topping over the sauce.
  8. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the sauce is bubbly.
  9. Let the casserole cool for 5 minutes before serving. Garnish with freshly chopped parsley.

Notes

[‘Blanch green beans until tender-crisp to avoid them becoming mushy.’, ‘Use freshly shredded cheese for a smoother sauce.’, ‘Cover the dish with foil if the topping starts to brown too quickly.’, ‘Taste the cheese sauce and adjust seasoning before pouring over the beans.’, ‘You can prepare the green beans and sauce ahead of time and assemble the casserole before baking.’]
