Chocolate Lava Cookies Recipe – Easy & Gooey Dessert Perfection

Warm, chewy chocolate cookies with a rich, molten center oozing with decadent chocolate. Perfect for casual snacking, fancy dinners, or holiday festivities.

  • 1 cup (220g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 ¾ cups (345g) all-purpose flour
  • ½ cup (45g) cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 12 ounces (340g) semi-sweet chocolate chips
  • ½ cup (120ml) heavy cream

Instructions

  1. Prepare the Lava Filling: In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth. Refrigerate for 15 minutes to thicken slightly.
  2. Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing!
  4. Shape and Fill: Using a cookie scoop or tablespoon, scoop out a ball of dough and flatten it slightly in your palm. Place a teaspoon of the chilled chocolate filling in the center and wrap the dough around it, sealing the edges. Roll gently to form a ball.
  5. Bake: Preheat your oven to 350°F (175°C). Arrange the cookie dough balls on a parchment-lined baking sheet, leaving 2 inches between each cookie. Bake for 10-12 minutes, or until the edges are set but the centers look slightly underbaked.
  6. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Serve warm for the best gooey experience!
