  • 2 cups (240 g) all-purpose flour
  • 1 cup (90 g) rolled oats
  • 1/4 cup (85 g) honey
  • 1 tsp (2 g) ground cinnamon
  • 2 1/4 tsp (7 g) active dry yeast
  • 1/2 cup (120 ml) milk
  • 2 tbsp (30 g) softened butter
  • 1 tsp (5 g) salt
  • 1 cup (120 g) powdered sugar
  • 2 tbsp (30 ml) milk (for glaze)
  • 1 tsp (5 ml) vanilla extract (for glaze)

Instructions

  1. Dissolve 2 1/4 tsp (7 g) of active dry yeast in 1/4 cup (60 ml) of warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine 2 cups (240 g) of all-purpose flour, 1 cup (90 g) of rolled oats, 1 tsp (5 g) of salt, and 1 tsp (2 g) of ground cinnamon.
  3. Warm 1/2 cup (120 ml) of milk and mix in 2 tbsp (30 g) of softened butter and 1/4 cup (85 g) of honey. Add the yeast mixture and stir well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring with a wooden spoon until a dough forms.
  5. Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
  6. Place the dough in a lightly greased bowl and cover with a clean kitchen towel. Let it rise in a warm spot for 1 hour or until doubled in size.
  7. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  8. Once the dough has risen, punch it down and shape it into a loaf. Place it in the prepared pan and let it rise again for 30 minutes.
  9. Bake for 35-40 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.
  10. Remove from the pan and let cool on a wire rack.
  11. For the glaze, whisk together 1 cup (120 g) of powdered sugar, 2 tbsp (30 ml) of milk, and 1 tsp (5 ml) of vanilla extract until smooth.
  12. Drizzle the glaze over the cooled bread and enjoy!
