Instructions

  1. Scoop 1 cup (240 ml) of small-curd cottage cheese into a mixing bowl. For a smoother texture, pulse it in a food processor for 10-15 seconds, but keep some texture.
  2. Peel and slice 1 large ripe banana into thin rounds about 1/4 inch (0.6 cm) thick.
  3. Place 1/4 cup (30 g) of cookies in a sealed plastic bag and gently crush them into small pieces, not powder.
  4. Add the sliced banana and crushed cookies to the bowl with cottage cheese. Drizzle 1 tbsp (15 ml) honey or maple syrup and 1/2 tsp (2.5 ml) vanilla extract over the top if using.
  5. Gently fold all ingredients together with a spoon or spatula to keep banana slices intact and distribute cookies evenly.
