  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) brown sugar
  • 2 large eggs
  • ½ cup (120 ml) milk
  • 1 teaspoon vanilla extract
  • Granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping
  • Melted butter for topping

Instructions

  1. Pour 1 ½ cups (360 ml) of apple cider into a small saucepan. Simmer on medium heat until reduced to about ½ cup (120 ml), approximately 10-15 minutes. Set aside to cool.
  2. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or cooking spray and line it with parchment paper.
  3. In a large bowl, whisk together 2 cups (250 g) of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, 1 teaspoon of ground cinnamon, ½ teaspoon of ground nutmeg, and ½ teaspoon of salt.
  4. In another bowl, beat ½ cup (115 g) of softened unsalted butter with ¾ cup (150 g) of brown sugar until light and fluffy.
  5. Mix in 2 large eggs, one at a time, followed by ½ cup (120 ml) of milk, 1 teaspoon of vanilla extract, and the reduced apple cider. Stir until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until no dry streaks remain. Avoid overmixing.
  7. Pour the batter into your prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Brush the top of the cooled loaf with melted butter and sprinkle generously with granulated sugar mixed with 1 teaspoon of cinnamon.
  10. Slice and enjoy warm or at room temperature.
