  • 1 cup coconut milk
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon fish sauce (optional)
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 1 cup shredded cooked chicken (optional)
  • 1 cup mixed vegetables (optional)
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Sprinkle in the curry powder and turmeric. Stir well to coat the onion mixture, letting the spices toast for 30 seconds to enhance their flavor.
  3. Pour in the vegetable or chicken broth and bring to a gentle boil. Reduce heat to medium-low and stir in the coconut milk, soy sauce, and optional fish sauce. Let it simmer while you prepare the dumplings.
  4. In a mixing bowl, whisk together the flour, baking powder, and salt. Add the milk and melted butter, stirring until a sticky dough forms. (If the dough is too dry, add a splash more milk.)
  5. Using a spoon or your hands, scoop small portions of the dumpling dough and drop them into the simmering soup. Cover the pot with a lid and let the dumplings cook for 10-12 minutes. They should puff up and float to the surface.
  6. If you’re adding chicken or vegetables, stir them into the soup during the last 5 minutes of cooking.
  7. Taste the broth and adjust seasoning with salt and pepper if needed. Ladle the soup into bowls, garnish with fresh cilantro, and serve with lime wedges on the side.
