  • 4 cups butternut squash, peeled, seeded, and cubed
  • 4 cups Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped pecans, dried cranberries, balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel, seed, and cube the butternut squash into 1-inch pieces. Trim the ends off the Brussels sprouts and cut them in half.
  3. In a large mixing bowl, toss the squash and sprouts with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Spread the vegetables out in a single layer on the baking sheet, leaving space between them.
  5. Roast for 20 minutes, then use a spatula to flip the vegetables and roast for another 15-20 minutes, or until tender and caramelized.
  6. If desired, sprinkle with chopped pecans, dried cranberries, or drizzle with balsamic glaze before serving.
  7. Transfer to a serving dish and enjoy warm.
