  • 4 cups low-sodium chicken broth
  • 28 oz canned crushed tomatoes
  • 2 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1 medium onion, finely diced
  • 2 medium carrots, peeled and sliced
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded or grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/4 cup fresh basil, chopped
  • 1 cup small pasta shapes (e.g., ditalini or elbow macaroni)

Instructions

  1. Dice the onion, slice the carrots, and mince the garlic.
  2. Place chicken breasts, chicken broth, crushed tomatoes, tomato paste, minced garlic, diced onion, sliced carrots, Italian seasoning, salt, and pepper into the slow cooker. Stir to combine and ensure the chicken is submerged.
  3. Cook on low for 6-7 hours or on high for 3-4 hours.
  4. Remove the chicken breasts and shred them with two forks. Return the shredded chicken to the slow cooker.
  5. Stir in the pasta and cook for an additional 20-30 minutes, or until the pasta is tender.
  6. Add Parmesan cheese and stir until melted. Optionally, sprinkle mozzarella cheese on top and let it melt.
  7. Garnish with fresh basil before serving.
