A warm and comforting soup featuring tender meatballs in a creamy, savory broth with potatoes, carrots, and herbs—perfect for chilly winter evenings.

Ingredients

  • Ground beef or pork (or a mix of both)
  • Breadcrumbs (regular or gluten-free)
  • Large egg
  • Milk (or a dairy-free alternative)
  • Finely chopped onion
  • Salt
  • Ground nutmeg
  • Ground allspice
  • Butter
  • Flour (use gluten-free flour if needed)
  • Chicken or beef broth
  • Heavy cream (or dairy-free cream)
  • Potatoes, peeled and diced
  • Carrots, sliced
  • Celery, chopped
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine ground beef/pork, breadcrumbs, egg, milk, onion, salt, nutmeg, and allspice. Mix until just combined—don’t overwork the meat. Form into small balls, about 1 inch in size.
  2. Heat a skillet over medium heat and add a splash of oil. Brown the meatballs on all sides until golden but not cooked through. Set aside.
  3. In a large pot, melt butter over medium heat. Whisk in flour until smooth, creating a roux. Gradually add broth while whisking to avoid lumps.
  4. Stir in potatoes, carrots, and celery. Bring to a simmer and cook for about 10 minutes or until vegetables are tender.
  5. Gently place the browned meatballs into the soup. Let simmer for 15 minutes, ensuring they cook through.
  6. Lower the heat and stir in heavy cream. Season with salt and pepper to taste.
  7. Ladle soup into bowls and garnish with fresh parsley. Serve warm.
