Creamy Baked Sweet Potato with Feta

A simple yet elegant recipe that transforms sweet potatoes into a creamy, tangy, and flavorful dish perfect for dinner or entertaining guests.

  • 4 medium-sized sweet potatoes, scrubbed and dried
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons chopped fresh herbs (parsley, cilantro, or chives)
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking tray with aluminum foil for easier cleanup.
  2. Wash the sweet potatoes thoroughly under running water. Scrub off any dirt with a vegetable brush and pat them dry with a clean towel.
  3. Using a fork, pierce each sweet potato several times to allow steam to escape and prevent bursting while baking.
  4. Rub each potato with olive oil, ensuring they’re coated evenly. Sprinkle with salt, black pepper, and garlic powder.
  5. Place the sweet potatoes on the prepared baking tray and roast in the oven for 45-50 minutes, or until tender and easily pierced with a fork.
  6. While the potatoes are baking, prepare the topping. In a small bowl, combine crumbled feta cheese, lemon juice, and chopped fresh herbs. Mix gently to combine.
  7. Once the sweet potatoes are cooked, remove them from the oven and let them cool for 5-10 minutes.
  8. Carefully slice each potato lengthwise and gently scoop out some of the flesh, leaving about a ¼-inch border inside the skin. Mash the scooped-out flesh lightly with a fork and set aside.
  9. Stuff the potatoes with the mashed flesh and top with the feta mixture. Sprinkle paprika for added color and flavor, if desired.
  10. Place the stuffed potatoes back in the oven for another 10 minutes, just until the feta is warm and slightly golden.
  11. Serve warm and enjoy the creamy, tangy, and sweet combination.

Notes

Choose firm, evenly-sized sweet potatoes for even cooking. Fresh feta cheese provides better texture and flavor compared to pre-crumbled feta. Don’t skip piercing the potatoes to avoid messy explosions in the oven.
