  • 8 ounces cremini or white button mushrooms, sliced

  • 1 cup full-fat sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 to 1 ½ cups shredded sharp cheddar or Gruyère cheese

  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the egg noodles in salted boiling water for 6-7 minutes until just tender but still firm. Drain and set aside.
  3. In a large skillet over medium-high heat, melt 2 tablespoons butter. Add ground beef or sliced sirloin, season with salt and pepper, and cook until no longer pink, about 5-7 minutes, breaking it into small pieces.
  4. Push the beef to one side of the pan. Add chopped onion and sliced mushrooms; cook until softened and golden, about 6 minutes. Stir occasionally. Add minced garlic in the last minute.
  5. Sprinkle 2 tablespoons flour over the beef and vegetables, stirring constantly for about 2 minutes to cook out the raw flour taste.
  6. Slowly pour in 1 cup beef broth while stirring to avoid lumps. Bring to a gentle simmer and cook until thickened, about 3-4 minutes.
  7. Remove from heat and stir in 1 cup sour cream until smooth. Adjust salt and pepper to taste.
  8. In a large mixing bowl, gently fold the cooked egg noodles into the beef stroganoff mixture until evenly coated.
  9. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle 1 to 1 ½ cups shredded cheese evenly over the top.
  10. Bake uncovered for 20-25 minutes until the cheese is bubbling and golden brown.
  11. Let the casserole rest for about 5 minutes before serving. Garnish with chopped fresh parsley if desired.

For extra crispy cheese crust, broil the casserole for 1-2 minutes at the end but watch carefully to avoid burning. To make gluten-free, substitute flour with cornstarch and use gluten-free noodles. For dairy-free, use coconut cream or plant-based sour cream and replace cheese topping with a breadcrumb and nutritional yeast mix.
