  • 4 cups Brussels sprouts, thinly sliced
  • 3 cups green cabbage, shredded
  • 1 medium carrot, peeled and grated
  • 1/4 cup red onion, finely diced (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley or chives, chopped (optional)

Instructions

  1. Trim the ends off the Brussels sprouts and slice them thinly, about 1/8 inch thick.
  2. Remove tough outer leaves from the cabbage and shred into thin strips to make about 3 cups.
  3. Peel and grate the carrot finely.
  4. In a large mixing bowl, combine the sliced Brussels sprouts, shredded cabbage, grated carrot, and diced red onion if using.
  5. In a smaller bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, honey, garlic powder, salt, and pepper until smooth and creamy.
  6. Pour the dressing over the veggies and toss gently to coat evenly.
  7. Cover and refrigerate for at least 30 minutes to let flavors meld and soften the cabbage slightly while keeping crunch.
  8. Before serving, garnish with chopped fresh parsley or chives if desired.
