  • 3 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth (low-sodium)
  • 1 cup sour cream
  • 1 teaspoon Dijon mustard
  • Optional: 1 tablespoon Worcestershire sauce
  • Fresh parsley, chopped, for garnish

Instructions

  1. Chop the onion, mince the garlic, and slice the mushrooms. Cut the chicken breasts into bite-sized pieces.
  2. Season the chicken with salt, pepper, and smoked paprika. Toss to coat evenly.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 4-5 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the chopped onions and sauté for about 3 minutes, or until softened.
  5. Add the minced garlic to the skillet and cook for 1 minute, stirring constantly to avoid burning.
  6. Stir in the sliced mushrooms and cook for 5-6 minutes or until they release their liquid and are golden brown.
  7. Sprinkle the flour over the mushrooms and mix well to coat. Let it cook for 1 minute to remove the raw flour taste.
  8. Gradually pour in the chicken broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for 2-3 minutes until it thickens.
  9. Lower the heat and stir in the sour cream, Dijon mustard, and Worcestershire sauce. Taste and adjust seasoning with more salt and pepper, if needed.
  10. Add the cooked chicken back into the skillet, stirring to coat it with the creamy sauce. Let it simmer for 2-3 minutes to warm the chicken through.
  11. Sprinkle with freshly chopped parsley and serve hot over egg noodles, rice, or mashed potatoes.
