A creamy, spicy buffalo chicken dip topped with a crispy cheese crust, perfect for parties and casual gatherings. This dip combines shredded chicken, tangy buffalo sauce, and melted cheddar cheese for a crowd-pleasing snack.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 280 grams)
  • 8 ounces cream cheese, softened (225 grams)
  • ½ cup sour cream (120 ml)
  • ½ cup buffalo hot sauce (120 ml), such as Frank’s RedHot
  • ½ cup ranch dressing (120 ml)
  • 1 cup shredded cheddar cheese (110 grams) for mixing
  • 1 cup shredded cheddar cheese (110 grams) for topping
  • ¼ cup blue cheese crumbles (30 grams), optional
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine softened cream cheese and sour cream. Blend until smooth and creamy using a hand mixer or spoon.
  3. Stir in garlic powder, onion powder, salt, and pepper.
  4. Add buffalo hot sauce and ranch dressing, mixing until evenly combined. Adjust heat to taste.
  5. Fold in shredded cooked chicken until well coated.
  6. Gently fold in 1 cup shredded cheddar cheese and optional blue cheese crumbles.
  7. Spread the mixture evenly into an 8×8-inch baking dish.
  8. Sprinkle the remaining 1 cup shredded cheddar cheese over the top.
  9. Bake for 20-25 minutes until the dip is bubbling and cheese is golden and crispy.
  10. For extra crispiness, broil for the last 2-3 minutes, watching closely to avoid burning.
  11. Let the dip cool for 5 minutes before serving.

Notes

Let cream cheese soften at room temperature for 30 minutes or microwave in 15-second bursts to avoid lumps. For a crispier cheese crust, broil the dip for the last 2-3 minutes. Use rotisserie chicken for convenience. If chicken is dry, toss with a teaspoon of buffalo sauce before mixing. Stir halfway through baking for even melting. Serve warm with celery sticks, tortilla chips, or pita bread. Leftovers keep up to 3 days refrigerated and reheat well in the oven or microwave.
