  • 2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 4 cups green cabbage, finely shredded
  • 4 tablespoons unsalted butter, divided
  • 1/2 cup whole milk or heavy cream, warmed
  • 2 green onions, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 clove garlic, minced
  • Optional: Pinch of freshly grated nutmeg

Instructions

  1. Peel and cut 2 pounds of Yukon Gold or Russet potatoes into even chunks. Place them in a large pot and cover with cold water by an inch. Add a pinch of salt and bring to a boil over high heat. Cook until tender when pierced with a fork, about 15-20 minutes.
  2. While potatoes cook, melt 2 tablespoons of butter in a medium skillet over medium heat. Add finely shredded cabbage and sauté until softened but still bright green, about 8-10 minutes. Stir occasionally to prevent browning. Season lightly with salt and pepper. Optionally, add minced garlic in the last 2 minutes.
  3. Drain potatoes thoroughly and return them to the hot pot off the heat. Mash with a potato masher or ricer until smooth. Add remaining 2 tablespoons of butter and warm milk or cream gradually, stirring gently until creamy and well combined. Adjust milk amount for desired consistency.
  4. Gently fold sautéed cabbage and sliced scallions into the mashed potatoes until evenly distributed. Add salt and pepper to taste. If using, sprinkle a pinch of freshly grated nutmeg.
  5. Taste and adjust seasoning. Serve immediately while warm, optionally topped with a small pat of butter.

Notes

Use Yukon Gold potatoes for creamier texture. Avoid overmixing potatoes to prevent gluey texture. Warm milk or cream helps blend smoothly. Sauté cabbage until tender but still vibrant. For vegan version, substitute butter with vegan margarine and use plant-based milk.
