  • 3 tablespoons unsalted butter, softened
  • 45 cloves garlic, minced
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (25g) grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the baby potatoes with olive oil, salt, and pepper in a large mixing bowl. Spread them evenly on a baking sheet.
  3. Roast the potatoes for 20-25 minutes, flipping halfway through, until golden and tender.
  4. Melt butter in a nonstick skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Lower the heat, pour in the heavy cream, and stir. Let it simmer gently for 3-4 minutes until slightly thickened.
  6. Stir in the grated Parmesan cheese and let it melt into the sauce. Add salt and pepper to taste.
  7. Once the potatoes are done, toss them gently in the skillet with the garlic sauce until coated evenly.
  8. Sprinkle with fresh parsley and serve warm.
