  • 2 cups (280 grams) cooked chicken, shredded or chopped
  • ½ cup (90 grams) orzo or rice
  • 3 large eggs, room temperature
  • ⅓ cup (80 ml) fresh lemon juice
  • Salt and black pepper, to taste
  • 2 tablespoons fresh dill or parsley, chopped (optional)

Instructions

  1. In a large pot, bring 6 cups (1.4 liters) of chicken broth to a gentle boil.
  2. Add the orzo or rice and cook according to package instructions until tender (about 8-10 minutes for orzo).
  3. While the pasta cooks, whisk 3 large eggs in a mixing bowl until frothy.
  4. Slowly add ⅓ cup (80 ml) of fresh lemon juice to the eggs, whisking until well combined.
  5. Ladle about 1 cup (240 ml) of the hot broth from the pot into the egg-lemon mixture, whisking constantly to gradually raise the temperature (tempering).
  6. Slowly pour the tempered egg-lemon mixture back into the pot, stirring gently. Keep the soup on low heat and do not let it boil.
  7. Stir in the shredded chicken, then season with salt and black pepper to taste.
  8. If using, add chopped fresh dill or parsley now.
  9. Let the soup warm through for 2-3 minutes on very low heat, avoiding boiling.
  10. Serve immediately, garnished with extra herbs or lemon zest if desired.

Temper the eggs slowly with hot broth to avoid scrambling. Keep heat low after adding egg mixture to maintain creamy texture. Use fresh lemon juice for best flavor. Orzo can be swapped for rice or quinoa for gluten-free option. Leftover chicken works well. Avoid boiling after adding eggs to prevent curdling.
