  • 1 cup (240 ml) heavy cream, cold
  • 1/2 cup (100 g) granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup (240 ml) strong brewed coffee, cooled
  • 1/4 cup (60 ml) Irish whiskey
  • 2 tbsp brown sugar
  • 24 ladyfinger biscuits (savoiardi)
  • Cocoa powder, for dusting (unsweetened)
  • Optional: dark chocolate shavings for garnish

Instructions

  1. Prepare the Irish Coffee Soak: In a medium bowl, combine 1 cup of cooled strong coffee, 1/4 cup Irish whiskey, and 2 tablespoons brown sugar. Stir until the sugar dissolves completely. Set aside to let the flavors meld while you prepare the cream mixture (about 5 minutes).
  2. Whip the Cream: In a large mixing bowl, pour the cold heavy cream and add 1/2 cup granulated sugar and 1 teaspoon vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form (3-4 minutes). Be careful not to overwhip.
  3. Combine Mascarpone: In a separate bowl, gently loosen the mascarpone with a spatula to make it creamy. Slowly fold the whipped cream into the mascarpone in batches, keeping the mixture light and airy.
  4. Assemble the Layers: Quickly dip each ladyfinger biscuit into the Irish coffee soak for just a second or two per side to avoid sogginess. Line the bottom of your dish with a single layer of soaked ladyfingers.
  5. Spread the Cream: Spoon half of the mascarpone mixture evenly over the soaked ladyfingers and smooth the surface with a spatula.
  6. Repeat: Add another layer of dipped ladyfingers on top of the cream, then cover with the remaining mascarpone mixture. Smooth the top carefully.
  7. Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  8. Finish: Just before serving, dust the top generously with unsweetened cocoa powder and add dark chocolate shavings if desired.

Notes

Dip ladyfingers quickly to avoid sogginess. Use cold cream and mascarpone for best texture. Chill at least 4 hours or overnight for optimal flavor and texture.
