  • 1 cup pistachio cream spread
  • 1/2 cup chopped pistachios (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the unsalted butter, granulated sugar, and light brown sugar until fluffy (about 2–3 minutes). Add the eggs one at a time, followed by the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until just combined.
  4. Use a cookie scoop to portion out the dough onto the prepared baking sheets. Flatten slightly with the back of a spoon.
  5. Bake for 10–12 minutes, or until the edges are lightly golden. Be careful not to overbake—these cookies should remain soft.
  6. Transfer cookies to a cooling rack and let them cool completely before adding the filling.
  7. Spread a generous layer of pistachio cream onto the underside of one cookie, then sandwich it with another cookie.
