  • 1/2 cup (4 fl oz) heavy cream
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • 1/2 cup shredded sharp cheddar cheese (optional)
  • Bacon bits for topping (optional)
  • Chopped chives or green onions for garnish

Instructions

  1. Peel and dice the potatoes into roughly 1-inch cubes. Finely chop the onion and mince the garlic. This should take about 10 minutes.
  2. In a large soup pot over medium heat, melt 3 tablespoons of unsalted butter. Add the chopped onion and cook, stirring occasionally, until translucent and soft—about 5-7 minutes. Add the garlic and cook for another minute until fragrant but not browned.
  3. Add the diced potatoes and 4 cups of chicken or vegetable broth. Stir to combine, then bring to a boil. Reduce heat to a simmer, cover partially, and cook until potatoes are tender, about 15-20 minutes.
  4. Remove the pot from heat. Add 1 teaspoon fresh thyme (or 1/2 teaspoon dried), salt, and pepper to taste. Using an immersion blender, puree about half of the soup to achieve a creamy texture while leaving some chunks for body. If using a regular blender, blend in batches, then return to pot.
  5. Stir in 1 cup whole milk and 1/2 cup heavy cream. Return to low heat and warm gently, but do not let it boil to prevent curdling. Taste and adjust seasoning as needed.
  6. For a cheesier soup, stir in 1/2 cup shredded sharp cheddar until melted and smooth.
  7. Ladle into bowls and garnish with crispy bacon bits and chopped chives or green onions if desired. Serve hot.

Notes

If soup is too thick, add more broth or milk to reach desired consistency. Avoid boiling after adding milk and cream to prevent curdling. Partial blending creates a nice balance of creamy and chunky texture. Russet potatoes are best for natural thickening. For dairy-free version, substitute milk and cream with coconut milk and omit cheese and bacon.
