  • 1 jar (12 oz) roasted red peppers, drained
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 12 oz pasta (fettuccine, penne, or spaghetti)
  • Optional: Pinch of red pepper flakes
  • Optional: Fresh basil for garnish

Instructions

  1. Boil a large pot of salted water and cook pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Puree the roasted red peppers in a blender or food processor until smooth. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add butter to the skillet and let it melt completely. Pour in the red pepper puree and stir well to combine.
  5. Lower the heat to medium-low and slowly pour in the heavy cream, stirring continuously. Simmer gently for 5-7 minutes.
  6. Stir in freshly grated Parmesan cheese until fully melted and incorporated. Add reserved pasta water, a little at a time, to adjust the sauce consistency.
  7. Season the sauce with salt and pepper to taste. Add red pepper flakes if desired.
  8. Combine cooked pasta with the sauce in the skillet, tossing well to coat. Serve immediately, garnished with fresh basil if desired.
