  • 1 lb Italian sausage (mild or spicy)
  • 4 Russet potatoes, peeled and diced
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Optional: Fresh spinach, kale, or shredded cheddar cheese

Instructions

  1. Heat a large pot over medium heat and add the sausage. Cook until browned, breaking it up into small pieces as it cooks. Remove the sausage and set aside.
  2. In the same pot, melt the butter and add the chopped onion. Cook for 3-4 minutes until softened, then add the minced garlic and cook for 1 more minute.
  3. Stir in the diced potatoes, followed by the chicken broth. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes or until the potatoes are tender.
  4. Use a potato masher or immersion blender to partially mash the potatoes, creating a creamy texture while keeping some chunks intact.
  5. Return the cooked sausage to the pot and stir in the heavy cream. Simmer for another 5-7 minutes to let the flavors meld.
  6. Add salt and pepper as needed, and any optional add-ins like spinach or kale. Stir well and let simmer for another 2 minutes.
  7. Ladle the soup into bowls and garnish with shredded cheese or fresh herbs if desired.
