  • 1 carrot, finely chopped
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside on a paper towel-lined plate to drain excess grease. Once cool, crumble into small pieces.
  2. In the same pot, melt the butter over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir constantly for 2 minutes to create a roux. Make sure it doesn’t burn—reduce heat if necessary.
  4. Gradually whisk in the chicken broth, ensuring there are no lumps. Bring the mixture to a gentle boil.
  5. Add the diced potatoes, reduce heat to medium-low, and simmer for 10-12 minutes or until the potatoes are tender.
  6. Stir in the heavy cream and shredded cheddar cheese. Mix until the cheese is fully melted and the soup is creamy.
  7. Season with salt and pepper to taste. Adjust seasoning as needed.
  8. Top with crumbled bacon and fresh parsley for garnish before serving.

Notes

Take your time with the roux to ensure a smooth texture. Use freshly shredded cheese for better melting. Add extra chicken broth if the soup thickens too much.
