  • 2 ounces (55 grams) cream cheese or Greek yogurt, softened
  • 2 tablespoons (30 ml) honey, preferably raw or wildflower
  • 2 tablespoons (about 8 grams) fresh herbs (thyme, parsley, oregano, or a mix), finely chopped
  • 1 small clove garlic, minced (optional)
  • 1 tablespoon (15 ml) extra-virgin olive oil, for drizzling
  • 1 loaf baguette or rustic bread, sliced thinly and toasted
  • 1 teaspoon (5 ml) fresh lemon juice (optional but recommended)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice baguette or rustic bread into 1/4-inch (0.6 cm) thick slices. Arrange on a baking sheet, brush lightly with olive oil on both sides, and toast for 8-10 minutes, flipping halfway through, until golden and crispy but not burnt.
  2. In a food processor, combine crumbled feta, softened cream cheese or Greek yogurt, fresh lemon juice, and minced garlic if using. Pulse until fluffy and smooth, about 1-2 minutes, scraping down sides as needed.
  3. Transfer whipped cheese to a bowl and gently fold in chopped fresh herbs. Add freshly ground black pepper to taste, being careful not to overmix.
  4. Spread a generous layer of whipped feta mixture onto each toasted bread slice.
  5. Drizzle each crostini with about 1 teaspoon (5 ml) honey, letting it pool slightly.
  6. Optionally, sprinkle extra fresh herbs or a pinch of flaky sea salt on top.
  7. Serve immediately for best texture. Store leftover whipped feta covered in the fridge up to 3 days; toast bread fresh before serving.

Notes

If the whipped feta is too thick, add a splash of olive oil or a teaspoon of milk to loosen. Do not skip the lemon juice as it brightens the flavor. Watch bread closely when toasting to avoid burning. For a dairy-free version, use plant-based feta and coconut yogurt. Gluten-free bread or crackers can be used for gluten-free diets. Adding chili flakes or chili oil can add a spicy kick.
