  • 1 can (4 oz) diced green chilies
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup full-fat sour cream
  • 4 oz softened cream cheese
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • Optional toppings: chopped cilantro, shredded cheese, diced avocado, tortilla chips

Instructions

  1. Heat 1 tbsp of oil in a large pot over medium heat. Add the diced onions and sauté until translucent (about 3-4 minutes).
  2. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
  3. Pour in the chicken broth and add the shredded cooked chicken, white beans, green chilies, cumin, oregano, chili powder, salt, and black pepper.
  4. Bring the mixture to a gentle boil, then reduce heat to low and let it simmer for 10 minutes.
  5. In a small bowl, whisk together the sour cream and softened cream cheese until smooth. Gradually stir this mixture into the simmering chili until fully incorporated.
  6. Simmer for another 5-7 minutes, stirring occasionally, until the chili reaches your desired thickness. If it’s too thick, add a splash of chicken broth.
